“Cream Soda” is one of the first effervescent drinks that were made on the basis of soda water, invented in the late XVIII century, and whipped egg whites, hence the word “cream” in the name. As the basis for the drink is the usual carbonated water, which is added to the beaten proteins of chicken eggs. Today this recipe is used only in home kitchens, as in modern industrial production dried protein is used. As flavors in the manufacture of “Cream-Soda” TM Kilikia invariably use vanillin and coumarin (coumarin – a component of the extract of a scallop or sweet clover, in the classic recipe).
